Roast "wet" veg (mushrooms, courgette, aubergine, tomatoes etc.) creates fabulous juice that can be mopped up with garlic bread, even better the next day, I put a foil lid on to keep hold of it.Root veg though should have none, a question of spreading it out enough probably in a single layer lots-of-room tray.
At 200 any moisture should be evaporating. Is the oven pre-heated? Is the veg. on a tray or a rack? In theory lightly oiled root veg on a rack or tray with GP or silicon paper should roast perfectly.
My pref. method would be to peel and cut the veg. lightly oil and season then roast very high (240+) for 15 minutes then add any herbs, garlic etc and reduce down to 140 for half an hour. Might vary according to the veg size but for most root veg this would work as a general guide.
