Pancake filling ideas

Well it's that time of the year again,

Making pancakes / crepes tonight, but going for savoury fillings rather than sweet ones. (Well, might use the left over batter for a bit of traditional lemon and sugar dessert ones).

Thinking about what to put in them:

Spicy tuna and tomato type thing

Chicken pesto

Spicy bacon and shallots

Beansprouts, cabbage, etc - a non deep fried spring roll sort of thing.

Any other suggestions / ideas?

Ham, Gruyere and an Egg on top is my filling of choice for a savoury pancake.

I've used pancakes to make "cannelloni"
