Pancake Day tomorrow so whose making some and has any good recipes and ideas to share on here?

I normally do savory crepes for tea, Normandy style. Just make a normal pancake batter but when you flip them cover them in ham, cheese and then crack an egg onto it and finish it under the grill. Serve with a big glass of cold Normandy cider
