We had some mussels a few months ago at an Italian restaurant and really enjoyed them so whilst at a farmers market today I bought a bag of them from the fish stall.
Ive never cooked them before so I appeal to the PH chefs, give some simple ways to cook them.

I have heard somewhere that steaming them in some white wine is a good way?

Big pan with a lid. Chopped shallots, garlic, enough white wine to cover base by 1/3 of an inch. Bring to the boil, chuck the cleaned and unopened cleaned mussels in and bang the lid on for 3 minutes. Remove from the heat and add a bid handful of chopped parsley. Serve it up with crusty bread.

Thats it.

Same as that and stir in some cream too at the end.

and don't forget... any that are still closed after cooking, throw away.

Exactly how i do it. Usually add some single cream and butter though right at the end.

Try a similer method, but substitute onions for sliced up leeks, and instead of white wine, a good cider. Finish with a swirl of cream at the end. Crusty or Rye bread and some fries wit mayo.

Or, fenel instead of onion, and a good spash of vermouth and some fish stock. Tasty as fk.

I've had them done in red wine and with a tomato flavour, perhaps puree, but can't find a recipe, anyone else come across this style?

also throw away any that are open (and don't close when tapped) before cooking.

Have a bad one and it will probably be the last time you have mussels smile

Yep avoid ones that are open/closed at the wrong time. I had some from a dodgy restaurant this time last year and lost a stone, not been able to tackle then since

Try them with shallots, chopped ginger & birdseye chilli, Hoegaarden and finish with coconut cream, sprinkle with a good handfull chopped corriander at the end
