A knives question
Discussion
Good morning, PH foodies!
I have a question regarding kitchen knives. I'm looking to buy a cooks knife in the reasonably near future to replace a tired Kitchen Devils one. Now, I have another knife, about 6 inches in length but with less of a curved blade, which is a Taylors Eye Witness Professional. I like it a lot, although I don't have much to compare it to. It's just the shape of the blade that makes it less than ideal.
Being a bit of a particular chap, I'd like to buy a matching cooks knife by Taylors. They look reasonably priced and I like the fact it's British.
But are they good knives? I know it's a personal thing, but any opinions are welcome. I don't have the budget for the likes of Global, so please bear in mind the price point I'm aiming at.
Thanks chaps and chapesses

You do realise that there are people on here who spend £1500 on one knife. So expect the answers to suggest something a level or two up from kitchen devil I have a question regarding kitchen knives. Yeah, fully understood - hence why I stressed the budget earlier! And, to be perfectly honest, I don't think my ability with a knife is at a level where I'd appreciate the difference a really expensive knife would make.
The other thing to bear in mind is that I live in a shared house, so being able to take some abuse would be handy.
Almost any knife will be fine, just as long as you enjoy the feel of it. You don't need to spend a lot of money. A Global/Wusthof etc will keep an edge longer than a cheaper knife, but a good idea is to sharpen your knife every time just before you use it (many chefs do this). I recently bought one of these :

and I find it really does sharpen well, I found it to be very impressive.

I've got a cheapo set of Sabatier ones like these; http://www.amazon.co.uk/Judge-Sabatier-Piece-Knife...
along with a decent knife sharpener. They're ok.
