I'm going to be getting a bit of this chap to eat on Sunday (though it may go straight in the freezer for a bit first):




Have only cooked venison once before in a slow cooker (that I no longer own) so I don't really know what to do with it to get the best from it.

Not sure what bits I'm likely to get, hopefully a little selection, so any recipes you've got would be good. Would particularly like any decent game pie advice as I've some pheasant in the freezer already that I could chuck in with it smile

2lbs venison cubed
pint redwine
pint chicken stock
2 Carrots finely chopped
1 onion finely chopped
1 onion sliced
tomato puree
rosemary
poatoes (small & halved)
button mushrooms

season meat & brown in pan (may need to do in batches)
remove meat & fry onions & carrots until soft
add herbs & puree and mix through veg
return meat and add liquids
bring to boil then reduce to simmer & put on lid
leave for hour or so then add potatoes & mushrooms for another half hour
remove lid season & thicken up with a bit of cornflower.

Did a haunch at the weekend, marinated in lemon grass, ginger and sesame oil overnight, then roasted, was beautiful.

I have also used thai style marinades on a fillet, which is then seared and served like a carpaccio with a tahini and soy sauce.

Andyaudi - have most of the ingredients at any one time so sounds ideal thumbup

Tumbler - both nice ideas, unusual. Hopefully i'll get enough bits that i can have a play around with some more adventurous stuff smile

Is that a roe deer?

I had some of this recently and found the flavour to be much more subtle than 'usual' venison. If anything, it was more like goat / lamb.

Advice (on here) was not to overpower it with red wine, but braise it in beer.

So I did.

I was given two shoulders and braised one in Hog's Back Brewery light ale (leftovers became 'shepherd's' pie).

The other was boned out and cubed for roe deer korma, while the trimmings were minced for burgers.

Melanistic fallow smile 2 year ish buck and should be nice tender meat as they live a very easy life down here.
