Whilst catching up with a friend today she mentioned she was having nachos tonight for supper and I thought to myself "that sounds bloody marvellous" it's been a while since I've had nachos - Cinema and they were terrible! Google's throwing up a load of guff. So what do PistonHeaders consider to be the ultimate nachos recipe? I'm off shopping shortly so I'll add the preferences to the shopping list! Bon Appétit!

Simple but effective. Big bowl full of nacho chips layered with grated cheese, chopped fresh tomatoes and pickled Jalapeños, bit of fresh coriander if you have it.

Bung it in a microwave until the cheese melts. Serve with loads of beer.

Cheese and Salsa Nachos are great also with a bowl of chilli to dip them in.

Tend to do our Nachos in the oven though.

Edited to say if your a beginner well you could always buy the old el paso nacho kit.

Catherine, I've heard the Old El Paso Kit is a bit of a let down. I consider myself to be a competent 'cook', however, this will be my first attempt at Nachos.

I'd like my nachos to consist of: Cheese, Jalapenos, Guacamole, Salsa & Sour Cream. What crisps do I use as Nacho chips? Doritos?

like this but I prefer to stick it under the grill

They aren't THAT bad really to be honest I would get some unflavoured nachos from your favourite supermarket personally rather than Doritos.

Ultimate Nachos:

lay a large platter with nachos (needs to be wide rather than deep, so you get more topping!)
sprinkle with a layer of shredded cheese, mixed with salt pepper and paprika. Melt the cheese under the grill.

in concentric rings, starting with the outside, quickly add:

- leftover beef chilli (re-heated)
- home made gaucamole (cold)
- home made salsa (just blitz tomatoes, red onion, pickled jalapenos, lime juice and spices)
- sour cream

garnish with coriander, pickled chillies and a spice mix of chilli powder, black pepper, cumin, oregano, salt and garlic powder.

Tesco economy tortilla chips (17p a packet) are fab for Nachos!

Re-fried beans on the bottom; layer of nacho chips, salsa, grated cheese, hot oven until cheese is starting to melt. Remove from oven, more salsa, jalapenos, cheese. Back in oven until cheese starts to brown.

Tortilla chips
Refried beans (whatever kind you want, spicy, smoked etc)
Cheese
Salsa
Guacamole
Sour cream
Chicken strips (optional)

Taken from TGIF in America (don't get the same nachos here). Still the best Nachos I've ever had.

I like to go with a bowl. Fill it halfway up with warmed through spicy taco-style mince, then layer the chips over that. then cheese on top of that. put the bowl under the grill to melt the cheese and brown off the edges of the chips, and then put on big dollops of guacamole and sour cream.

Yep - they're fine. Big wide platter, layered with left over chilli, grated cheese of your preference, a jar of jalapenos and then under the grill until the cheese has melted. Some sour cream on top and shredded coriander if it's to hand and all is good ....

A few cloves of Garlic
A couple of Finely chopped shallots
A dash of sugar & seasoning
Shallow fry in minimal oil until softening

Add a Tin of chopped tomatoes & a squirt of tomato puree
Some dried chilli flakes and leave to simmer for 10 minutes
It will thicken - ready to use as your base salsa/nachos mixture

A layer of Nacho chips on a large plate / platter.
Spoon over some of the mixture
Another layer of chips
A bit more mixture
Sprinkle over chopped Jalapenos
Cover with Mozzarella

Throw in the oven / under the grill to melt

Enjoy.
