My (brief) google search didn't come up with an answer - seems it just works.

Bloody good though - forgot I had it until I was cleaning the cupboard the other day.

A knife blade can do the same thing - but these are safer.

I doubt that they do, really. The Chrome oxide layer that makes Stainless Steel stainless is pretty impermeable. It won't be absorbing anything.

Are you sure you aren't just washing your hands with a 'magic thingy' in them?

The chemistry and logic say it won't work...... yet it does.

I really need to get one of these as Garlic can linger on your fingers even after washing. I think it gets into the skin so washing alone will not get rid of it.

The smell in garlic is caused by compounds called thiols / mercaptans, which contain sulphur.
I think the iron in the steel binds to the thiols (via the sulphur atom) and removes it. It is well known that iron and sulphur have an affinity for each other (see Pearsons hard/soft acid bases).

Interesting. Should be an easy household experiment too. Candidates for a likely household lump of iron?

It works because it has been blessed, you need to get one that hasn't yet been blessed (sometimes sold as seconds) to do a fair comparison.
