I want to make soup for the first time. Veg soup as I have the following ingredients.

2 onions
1 leak
1/4 turnip
2 medium sized potatoes
4 carrots
125g Red Split Lentils
Plenty of Veg Stock cubes.

Can anybody help me out using these ingredients?

Chop all the veg and boil it with the lentils until its all soft then blitz it all up to make a smooth creamy soup.

You could also add a bay leaf or two and a bouquet garni for a bit extra flavour. If you add the bouquet garni and bay leaf remember to take them out before blitzing the soup.

Bouquet garnis can be bought from any supermarket. They are in the herb section and look like a tea bag or you can make your own with the outer leaf of the leek.

Sweat the veg in a knob of butter on a low heat (lid on pan) until slightly softened before you add the stock / lentils.

This concentrates their flavours. Stir occasionally and don't let them colour.

Have a look at some recipes for guidance but I have a feeling that 125g lentils is a huge amount - my feeling is you want something like 50g but check.

I'd so as suggested, chop veg, sweat in butter/oil, add water to cover, chuck in a couple of stock cubes, add the lentils (I find they stick if put in with the veg initially), simmer for around 20 minutes then blitz with a stick or put in a liquidiser.

I've just finished eating something similar that I made a couple of days ago with veg that was well past it's best.

You could get a few different soups from that. As said leek and potato or if you have got some orange juice and or dried coriander to hand carrot and orange or coriander. As suggested combine it all and blitz for a very hearty veg or if you have a bit of bacon add that to lentils and chopped onions, turnip, potato and carrot for bacon and lentil.

Thanks for the replies. It was very tasty.

Sweated the veg in butter.
Added water and stock cubes.
Added lentils.
Boiled for 10 minutes.
Simmered for 50 minutes.
Used potato masher to blend it together.

End result was great smile

I find it's very easy to over-blitz soup and turn it into something akin to wallpaper paste.
