Never made them before. Any recipe suggestions as I fancy a go at making them this weekend?

quick and easy, but there's probably more 'authentic' one out there. I don't bother with the processed cheese.

My Dad does these for breakfast served with sour cream, guacamole and salsa which really works well.. recipe along the lines of the following:

He puts bacon or chopped up sausage in too though and the filling is pretty much just grated cheese (the tex mex spuicy stuff if you can get it), egg and spinach. The recipe above is much more fiddly than his!

Wanted a recipe that i could knock togther quickly and easily, so I went with the one below.

Worked well all in all.

Ingredients:
Pack of cooked sliced chicken
Grated Mature Cheddar cheese
Spring onions finely chopped.
Chili flakes
Fresh red chilies (red bigger type not the Birds Eye type)
Red Pepper finely chopped
Fresh coriander
Tub of Guacamole
Tub of Tomato salsa
Tub of Sour Cream
Pack of good quality tortillas
A mixed salad to accompany with a balsamic dressing.
