coast to coast route on google maps?

Can you use something like bikehike.co.uk to map it, save as a GPX file
Then use one of the online GPX to KML converters (or Google Earth can open GPX/save KML) - get this into Google Maps.
Not sure on a mobile device, but on the PC you can open a KML file from My Maps /
Create new map / Import
There may well be better choice apps for your mobile device (eg. MotionX on the iPhone)

I am running android phones and the native map and alternative gps options don't really allow you to create a map and then save it.

http://ridewithgps.com/ is also very good and can export files. The routes are planned directly using Google Maps TeleAtlas mapping API and you can export using GPX or KML for Google maps
