Anyone got any good recipes? My Nan was in charge of making them for Xmas but died last year, so I feel I should pick up the mantle (sadly didn't get her recipe though) - any suggestions out there?

Buy a packet of pickling spice and the instructions will be on it.

The one thing it won't mention is the need for 'brining' (for crispness) or the onerousness of peeling.

If you buy a bag of pickling onions, either keep them somewhere damp (like the fridge) and/or soak them in water for a few hours to make the task of peeling easier.

Once peeled, lay the onions out in a non-metallic tray, cover them with salt and give them a good 24 hours before rinsing and pickling.

Cram the onions into jars, boil the spices in the pickling vinegar and strain through coffee filters before using.
