A neighbour came round the other evening with a wheelbarrow full of plums they we looking to give away (they had already given 15kg to the local hotel!). So I now have a large bowl of plums in the kitchen and I am wondering what to do with them all before they go off. I have a lovely recipe for chicken with plum sauce, but would appreciate some more suggestions. The neighbours said there are plenty more for taking aswell!!!

1 lemon
1/4 oz of root ginger
Put the plums in bucket with the sliced lemon and the chopped ginger
Pour over about 3.5 litres of boiling water and leave to stand for a couple of hours
Get in there with (clean) hands and squish the fruit
Leave the liquor to stand for a day
Strain the liquor into a demijohn through muslin using a funnel
Pour about two thirds of the strained liquid into a big saucepan, and add 2 lbs of sugar
Heat until the sugar is dissolved
Pour back into the dj, and leave to cool for about 3 hours
Add two level teaspoons of dried yeast, one level teaspoon of yeast nutrient, and one level teaspoon of pectin (dissolved in 1/2 a cup of hot water)
Plug the dj with an airlock, and ferment for 2 - 3 weeks.........
Rack off into another dj
Crush 1 camden tablet and stir in
Leave for 2 days
Add finings and stir
Leave to clear, then bottle
Best left for 6 months
(During prep, and before adding yeast, make sure everything is sterilised and rinsed i.e. spoons / funnel / demijohn)
Take a slack handful of plums, and two ripe nectarines.

Slice / Quarter them

Place in an oven proof dish.
Throw some brown sugar over the whole lot.
Grate some ginger ( the more the better).
Squeeze a lemon or a lime over it.
Hot oven.
20 mins.

Serve with cream or similar.
