My wife is a bit fussy with food and I have spent the last 9 years widening her tastes.

This week is the turn of the pork steak / chop! Any ideas of some simple preparation?

Was going to accompany it with roasted garlic new potatoes and some sort of greenery (cabbage / leeks).

Oh, and best tactic to cook them nicely without drying them into lumps of leather?

Cider marinade.

Spot of mustard, garlic, S & P, mix with cider and a splash of calvados. Leave as long as possible then flash fry / griddle.

New potatoes and some greens on the side.

Mesquite - season them generously with mesquite rub and a small dab of butter - wrap them in tin foil and bake at 370 for 30 minutes.
Out of the oven - drain the juice from the foil wraps into a hot skillet and flash-fry the steaks for 2-3 mins each side. Let rest for 10 mins.

Get the right pork chops in the first place. Outdoor reared and nice and thick with a good marbling and covering of fat. (You can always cut the fat off.)

Pan-fry the chops slowly in butter, turning and turning until they're done with a nice brown goo in parts.

I'd serve them with apple slices fried in butter, or mushrooms in a creamy garlic sauce, and plain steamed potatoes to soak all this up.

Flash fry in an extremely hot pan (a casserole is good for this - no more than 30 secs a side) Braised in cider and slices of apple. The apple and cider can then be mashed/blended together to make a sauce (retaining all the meat juices and flavour)

Serve with boulangere potatoes and some veg of your choice.

Buy some oatmeal (not rolled oats). Dip the chops in beaten egg, then cover them in the oatmeal and gently fry in a shallow frying pan using a small amount of oil, turning once.

Absoloutely gorgeous, especially with a nice gravy.

Not long back from Spain and the pork steaks in our all inclusive were the danglies! Managed to replicate them the other night. Get a griddle pan or similar very hot, season steaks with plenty of sea salt. bit of paprika and wee bit of dried chili flakes. Griddle steaks in a touch of olive oil for about 2 Min's each side(depending on thickness but pork can be eaten pink) then remove from heat and (IMPORTANT) rest on a warm plate for a few Min's. They will be juicy as hell, just be brave with the cooking and resting time(they will still be cooking when resting due to residual heat). Serve with potatoes and roasted veg or spicy rice, roasted veg and pitta bread. Enjoy mate.

Some nice ideas here. I must try some myself.
Generally I find the darker the pork is,(in the shop) the tastier.

Had pork steaks last night...usually fry them with a few peppercorns in the pan, then take em out when done, add brandy & cream (or white sauce) to the juices stir for a minute or so and pour that over the chops. Goes well with new potatoes in their skins and maybe steamed leeks.

Get a George Foreman grill if you have on, griddle if not and cover them with green pesto. Cook as above a few mins each side, and you are done.

Simple yet delicious. Garnish with some pine nuts and serve with some carbs or salad!

This is a very good (and delicious) idea. Flambe the brandy then stir the cream in. Delightful.
