quesadilla recipe
Discussion
Hi folks,
The other night I felt a bit lazy and couldn't be bothered firing the barbecue up (I know, I know, burn him et al). I had a few wraps left over and some cheese and ham in the fridge so I knocked the following up:
Ingredients:
Homemade mayo
Tomato puree
Herbes de provence
3 wraps
cheese (I used a mature chedder but emmental or comte would work well too. In fact, probably any hard cheese)
ham
Mix the mayo, tomato puree & herbs until you get a nice creamy tomato sauce. Spread all of this on a wrap. Layer your ham on top and chuck over some grated cheese. Add the next wrap and another layer of ham & cheese. Whack the final wrap on top and sprinkle lightly with cheese. Bang the whole thing into the oven at 180 until the cheese has melted and bobs your uncle.
It was delightful. A nice change from a pizza and surprisingly filling. The next one I make will be a croque monsieur quesadilla with a bechamel sauce base.
For quick, lazy yet tasty food, this is a good one.

Quesadillas are great, and really easy as you say!
