I have to remove my engine out of our C5,
what's the best way to take it out ?
1. Drop it out the bottom
2. Can I take out the rack and remove it from the top ?
3. Have no manuals at present, any recomended manuals you know of ?

I don't know for sure but I seem to recall that they mount it en bloc from underneath as a single unit with the crossmember.

I've got a copy of the GM service manual and it says that you hoist the engine out of the top after removing the PAS and a whole bunch of other gear. 12 pages of removal instructions and 13 pages of how to put it back together again !

The C5 has horizontal engine mounting brackets which bolt to the subframe so I reckon you have to reduce it's size somewhat and then hoist it out the top
