Doing stuffed chicken breasts wrapped in Parma ham tomorrow at the request/order of the Mrs and have tried various fillings before and am looking for any suggestions that will be a change.

Anyone have the ultimate stuffing?

Or, slightly less work, some nice fresh pesto - which is essentially the same thing.

Not tried the salsa idea, PnM. A popular dish here is mexican chile-verde, which essentially is covering whatever you like (chicken breast, burrito etc) in green chile-ish, salsa-ish goodness. It's damn nice from time to time. Problem is, I infuse a 'liberal' amount of habanero to it, and get accused by my wiser half that I'm being selfish.

Just made this today. I used onion and chive cream cheese and a smear of red pepper pesto. The cream cheese and pesto were store bought items so no fancy recipes. Just butterfly the breasts, bash them a bit to flatten, then glob a couple teaspoons of cream cheese and a teaspoon of the pesto wrap in ham, then bung in the oven. Serve with a big mound of creamed spinach.

I don't really belong in here do I?. hehe

Sounds pretty good to me, mate. Your terminology, such as "glob" and "bash" is right up my street.

Whole chicken, ballantined, stuffed with duck confit and fois gras, and served with a port jus.

Or, slightly simpler, stuffed with a mixture of sausagemeat, mushroom pate and porchini muchrooms.

Try chicken breast stuffed with Chorizo and Goat's Cheese - very strong and distinctive flavours, but delicous.

Not <quite> what you meant - but I made chicken kievs on monday night, garlic and herb buttery goodness.......
