What's the difference between dot 4 and 5? Is it noticeable and worth being considered?

I use DOT 5.1 in my S2, it just works at higher temparatures

Use the higher stuff if you gonna do track days. There's nothing more scary than flying into a corner to realise that your brakes have boiled....

...With possible exception of seeing your brake disc flypast the window of the car, as you realise you will never miss that tyre wall now.......
