If you are making Bambi Burgers, add some fatty lamb to the mix because the venison is too lean on its own.
i have 1.4kg of pig fat in the fridge waiting for the sausage making to happen this weekend - although i need to go to the butchers and get about the same amount again. I find 20-25% fat is about rightdcw@pr said:

That venison looks superb!
Did you do all the butchering yourself? You must have a huge freezer...
yes I do it myself.Did you do all the butchering yourself? You must have a huge freezer...
my freezer is tiny - if it were entirely empty I might just about be able to fit this animal in it. I never shoot this species of deer because they are too big for me to deal with easily. At the moment it is jointed, and these joints are hanging in my game fridge in the garage. Most of the meat will go into sausages, and a lot of them will have to be given away.
