Sabatire Knives

I would just like to say these knives are bloody sharp just got back from A & E after having my index finger glued up. The nurse did comment on what a lovely clean cut it was.

Never mind, good knives as you say. It's easier to cut yourself on a blunt knife than a sharp one though, apparently!

IIRC it's not a single brand per se, rather a number of manufacturers who have the right to use the Sabatier name - at best great gear, at worst an exercise in branding less than good equipment.

A sharp knife will slip less but the cut will be deeper. Blunt knives tend to slip more but you often get away with it more.

After doing a stint (many moons ago) as a butcher, I'll take a sharp knife every time. My anecdotal observation was that slippage due to a blunt knife was a fair bit more frequent than cack-handedness due to a sharp one.

My school job was working in a butchers cleaning up at the end of the day and it taught me a great deal of respect for sharp knives, and yes even now I have a block full of very sharp Sabatier knives of various shapes and sizes. Love them...
