I want to make a cake that consists of a cheese cake biscuit base and a crumble topping, is this possible and if it is, does anyone have any tips on how to do it successfully?

Would have thought you'd have to do it in two operations and then meld them together.

So do a water baked cheesecake and then a fruit crumble and carefully place one on top of the other.

I have a cheesecake recipe that has a biscuit base and biscuit topping - i guess you can substitute oats instead of biscuit on the top as you can with the base.

Give me 48 hours to find time to dig it up and type it out on here if that's okay? smile

Ah, thank you for bumping, I'm sat down with time to spare so here goes.

Taken from "The colour book of cheesecakes by Rhona Newman" NOM NOM NOM :P

Vanilla cheesecake.
Base;
2oz (1/4 cup) butter
1oz (2tbl spoons) sugar
6oz digestive biscuits - crushed

Filling;
1/2oz (1 tbl spoon) gelatine
3 tbl spoons (1/4 cup) water
2 eggs separated
1/2 pt (1 1/4 cups) milk
1oz(2 tbl spoons) caster sugar
2tsp vanilla essence
12oz (1 1/2 cups) of curd cheese of some description

Melt butter and sugar and mix with the biscuits. Press half the mixture into the base of a greased 8 inch loose bottomed tin (cheesecake tin with the removable sides is best) Leave to harden.
Place the gelatine and water in a bowl over a pan of hot water. Stir until dissolved. Put the egg yolks, milk, sugar and vanilla essence in a separate bowl. Cook over a pan of simmering water until the mixture coats the back of a spoon (WTF?!!). Chill. Stir in the curd cheese and gelatine mixture. Whisk egg whites in a separate bowl and fold into mixture. Pour mixture over base and cover with remaining crumbs. Leave in refrigerator for several hours to set. Remove tin and decorate with strawberries if you wish.

I hope this is the kind of thing you were after, let me know how it goes as it's not one I've made yet. Having said that, it does sound vaguely easy to do.

This sounds to me like the classic German streusel cake. I make this on a thin yeast pastry base, with a 'quark' and lemon zest filling, and streusel topping. (As does V8 Mate - and I suspect he's your man for the recipe since I am temporarily without my cookbooks.)
