I've just bought and fitted a pair from these people: http://www.ncbmotorsport.com/ for my first track day with the Eunos at Brands next month (the 8th). They were straightforward to fit and, to my eyes at least, convert an old nail of an MX5 into a mean and purposeful track weapon! Not an Ultima, obviously, but they seem like the kind of oufit that supplies for a wide range of cars and would be worth a call.

Firstly for a trackday they don't usually check. Which means you'd probably be OK so long as you don't bin it 
Otherwise you could get a pair of these which you're more likely to be able to fit without hacking bodywork away. Race scrutineers are happy to accept these. Merlin Motorsport do them too.

I've had another look at the rear and I've got the following loop welded just below the gearbox:
Completely forgotten it was there (it's me age!). Hopefully this will suffice if the marshalls need to pull me out backwards. Will wrap it in yellow tape to make it more obvious. The front however is a different matter. The strap option would definitely be easier to fit through one of the front vents, but if I got pulled out at an angle it might well catch on the side of the vent and do more damage. Will have a look at fabricating a bracket over the weekend. If I come with anything useful will post a picture.
Obviously most important thing is not to go off in the first place

The factory supplied towing eye bolts through the ali skin and chassis in front of the rad.
The structure at that point has the front tube, a tube running back along the centreline of the car and two diagonal tubes. The factory mount drills into the front cross tube and the centreline tube which gives the most strength.
If you used one of those straps and bolted it through just the centreline tube it would be almost as strong. If you take the strap and roll it up you can then cable tie it and leave in place until the next time it is needed. To use simply cut the cable tie.
I have a load of old seat belt brackets which I think I will use to make my own version.
