I'm just trying to figure out how my VTEC (Variable Valve Timing and Electronic Lift Control) engine works, and I've sorted out how Variable Valve Timing works, but I'm at a loss to what Electronic Lift Control is, or what lift is for that matter, or why having it electronically controlled is good.

Anyone with more technical knowledge than me (ie. has some knowledge) know?

depends if its VTEC or iVTEC,

VTEC, to adjust valve lift (how much the valve opens) swaps a low lift cam lobe for a high lift lobe at high revs and vice-versa for low revs.

I believe iVTEC uses something different, unless someone can confirm otherwise?

Lift control alters the effective ratio of the rocker arms / cam followers and can vary lift.

Principal benefit is that the throttle can be left wide open and the engine controlled on valve lift. This improves engine efficiency and decreases fuel consumption.
