sorry I cant help with this although I have similar setup, what I want to know is.. how do you link up the wireless senders to your tv/skybox, do they take up a scart or do they have some sort of link through scart so you keep the remaining connections but but theirs in the middle?

Just a scart from sat box to one reciver and then scart to the tv on the other very simple bu ti would reccomend buying a decent one as the cheap ones arent very good.

The 360 does emit a wireless signal even on standby (wireless controlers?) and can sometimes interfere with other wireless devices ie. mice, keyboards, wireless laptops/dongles. The same goes for microwaves, with alot of people dont realise can affect wireless signals.

Might just be you - we've got a similar setup with Philips sender / receiver boxes and I've just applied the update and checked, and we still get the same interference as ever.
