Any idea what will happen to my Reg T27TVR - I assume I could put it on retention and revert the car back to its original plate as a foreign buyer would have no use for it - correct?

Yes, put it on retention and you'll get another number for the new owner to have on the car until (or if) they register it in their country?

How long does it take, and do I have to wait for the V5 to come back with the new reg? or is it a case of going to the local DVLA ofice.

Ussually You send of V5 etc... Takes around a week depends whether they want to check it over which sometimes means a trip to the local DVLA office (never happened to me but heard it can happen if they feel like checking something over) They will send you back a new reg to apply (ussually old one) and a new tax disk (if you sent one away in the first place). This reg then has to be applied to the car so a trip to the local garage for new plates and thats it done.

i got mine back twice in around a weeks time.
