It's a couple of years since I've done this, but Adobe used to sell (actually nearly give away with these packages) a package called Streamline. This converted a bitmap image into a vector based image. I'm not sure if this is now bundled with other Adobe products, or has been enhanced into something else, but it should be easy to find out.

I use CorelDraw Trace 11, it takes a image file like .jpg, you convert it to black/white then perform a trace then save to vector .ai or .eps
It turns out a decent trace but not 100% accurate, some editing is required when importing in illustrator, the bigger the original file is the better the trace is

Yep, I can convert the text to paths and export them, but I can't find a way of converting my logo to paths to export that.
If it's a simple logo then using the 'magic wand' selection tool will let you select the outline of the logo and then you can simply use that selection as a path.
If it's more complex you can place the logo into Illustrator and use the bezier tools to trace around it.
