rFactor or GTR 2 (+ Race '07)
Discussion
It really depends what you want from your sim. I think that they both use the same basic physics engine, but I may be wrong.
rFactor has a massive range of mods to choose from, both cars and tracks, some of which are very professionally finished. The graphics can be improved with an HDR plugin.
Have a look at some of the rFactor mods here:

GTR2 has been succeeded by Race07 now and its addon GTR Evo. I have Race07 and can confirm that it is an excellent sim, the graphics in GTR Evo have been said to be considerably better than rFactor but since I don't have it I can't really comment.
Have a look at the websites for each sim and maybe look for some videos of them in action.
I use rFactor partly because of the range of mods that are available.
Good choice with the G25 btw.

Slight hijack alert!
I got a new sealed copy of rfactor off evilbay for £5 to go with the g25. Haven't had much of a blast with it yet as I'm still refining the stand for the g25.
Anybody recommend any good mods. Anyone using realfeel plugin?

Join the PistonHeads rFactor league... We're currently looking for the mod/tracks to race for next season starting January '09.
Good fun close racing with no dodgy ramming or wrecking ( at least, most of the time!
).
All the info is on this thread

Porsche Carrera Cup 2007
Italian and European Challenge (Ferrari F430's)
MMG 2007 F1
F1 1988
GP 1979 (1979 F1 cars)
Epsilon Euskadi (Sports cars)
2007 Champ Cars
Chevrolet Corvette C6
In terms of tracks, I recommend the Nordschleife, Mid-Ohio and 70's Le Mans.
Regarding RealFeel, there are a lot of settings to get the right feel depending upon the mod and the wheel type. Sometimes I use it and sometimes I don't.
