Some early ones didn't have A/C (1996 models) but almost all do. I think it was a no-cost delete option which very, very few people ticked.
Otherwise options include:
Electric seats
Heated seats
H/K stereo upgrade
Folding rear seats (saloon only, coupe had as standard)
Individual paint
Individual interior
PDC
Electric rear windows
Rear sunblind (possibly?)
That's about all I can think of but I'm sure there's more.

Wasn't the EVO a later version? Seem to remember the M3 came out in E36 form then the EVO came along so maybe the 96 trims and things don't apply the same way?
IIRC the EVO has a couple of engine types and there's a certain one you should go for - probably more important than trim levels?
Remember having great fun in my mate's one back in 1999 when it was brand new.

Hi: If I get chance I'll track down a full spec sheet, but in case I don't:
Auto aircon, I'm pretty sure was standard; the older 3 litres had it optioned, with a normal aircon fit as standard. All Evo's are 3.2 litres - originally obvious due to white indicator lighting, rather than orange...obviously, don't rely on that now!
The first Evo's were '96, last registered in '99, but last built in '98, I believe - so there are a couple on "V" plates about.
I think they were always leather, with alcantara as a n/c option. "Vader" high back seats were an option, + electric movement & heating.
SMG (automated clutch-less manual) available in coupe & convertable, not in saloon but I've seen one advertised in RHD. Cruise I think was a rarely taken cost option.
Three different alloy types: standard fit was 10 point "sunflower" on coupes, 5 point polished on convertables & silver painted Contours on saloons, but all were interchangeable for a fee, & after this length of time, may well have been anyway!
Saloons usually had "walnut" trim: door handles, ash-trays, gear & console surround & glovebox insert. Optionally, you could plaster the things with it, like a tarts Jag! It was a option on the others, I think, seem to appear on convertables more than coupes. Leather could also be spec'd. Either BMW or Pioneer rad/cassette + 6 cd changer. HK speaker system as option.
Lots of "Individual" paint colours, should say "BMW Individual" on the front strut sticker.
Passenger airbag was an option for some of the time, only the last few got side airbags in the door trim.
Rear boot spoiler was a delete option, I think. Electric sunroof was a cost option.

My Evo is a '96 model, and is pre-facelift so has the old style side repeaters, front grill and nosecone.
There's only one Evo engine type. They're all 3.2 litres with 316bhp.
You'll be doing well to find an Evo without leather or aircon - there were so few spec'd that way. Most are of similar spec, but as listed above there are some extras.

Ta - I was working back, & missed a year! I guess yours is one of the last, with a couple registered into 2000.Also forgot PDC & headlamps washers as cost options. Could delete opt the M badges on the sides & rear, jsut leaving them on the sill covers.

You may be confused with the different engines in the Euro and USA versions though they were both called M3 Evo's.the brain see... it's ain't as good as it oughta be these days....
