Atlast, some progress
Discussion
After nearly a month in the cold dark garage sanding, filling, sanding, filling..... the sunroof has GONE!!!
The car did look like this:

Something I did notice whilst sanding the roof... The nearside rear corner has a much greater curve on it than the offside corner.... Must have come out of the mold like that.... :S
Pics from tonight (Its dusty, but doesnt look too bad)

Just need to clean up and start bolting bits back on.... No doubt I will discover that some of the more bizarre bits are missing :S

The process was:
Layup a thin fibreglass sheet 3 layers chopped strand mat... A piece of polished glass is perfect.
Glue and screw the fibreglass board inside the shell with a decent PU glue...
Once the glue has set, layup more fibreglass inside the hole from above, 5 layers pretty much filled it up. Make sure the layers key in with the edge of the hole..
Once its all set, fill..sand, fill, sand, fill.... you get the idea
