Surely you want boned and filleted?

A fillet of fish doesnt neccesarily mean deboned, does it?

How do they manage that? Even I can fillet mackeral properly.

Are there even any bones in them that don't run vertically down the spine?

From Wikipedia: "Fillets may be skinless or have skin on; pinbones may or may not be removed."

Removing every little bone from a mackeral is nigh-on impossible but could be done with tweezers if you have the patience (I don't).

Just the nature of the beast I think - they're very fine and you can't get them all out.

tend to cut the end and front 1 cm off, most of the bones seem to be at the front

I only buy whole Mackerel - it's easy to remove most of the bones after pan-frying or oven roasting them.

You just carefully and slowly pull the backbone out after cooking and it'll bring most of the other bones with it, leaving you with a comical Tom and Jerry style fish skeleton.
