I beleive the S has a 7.5" diff as opposed to a 7" Diff, if I was looking at them both on the ground how could I tell which is which??

you have to measure between the bolt mounting faces that get bolted onto the chassis - its the longest one I recall.

The top front mounting bar that goes from one side of the diff to the other is different. On the 7.5 it is solid and is threaded to accepts bolts. The 7" has a hollowed out rail and takes a long bolt and nut.
