Flat mushrooms.

I bought some huge flat mushrooms the other week and they've been sitting there in the fridge with me pondering what on earth to do with them. So tonight I thought what the hell and just chucked random stuff on top of them and threw them in the oven. Well it was sooo tasty I thought I'd share...

I just sprinkled some hot peri peri sauce on them, then put stilton cheese on top followed by a big dollop of red pesto, then some jalapenos. Put them in the oven for 10 to 15mins. By god they're tasty!

Anyone else have any flat mushroom recipes?

Used to pick them. Superb just quick fried then on toast with lava bread and egg in its various forms (egg fried or scrambled etc).

I like them baked in a foil parcel with butter and thyme.

Fry some onions and garlic, mix with a creamy cheese and some breadcrumbs. Top with more breadcrumbs and bake. Usually throw the stalks in with the onions too.
