I walked into the kitchen yesterday to find my beloved using my Global vegetable knife to cut the stems off a bunch of flowers. Nice thick, very woody stems.
When I calmy asked why she decided to use that knife rather than the other old knives, I was told that it was the sharpest when she cooks. I did explain there was a reason it was so sharp as I spend half a day sharpening them all properly once in a while.
Her answer was that if it went blunt again that I could sharpen it. Yes dear, I could crash the car in to a wall once a month and then have it repaired but that would be silly...

Best way is to use a Japanese water stone (the global branded one for example - although there are much better ones out there). The ceramic steel is fine for maintaining a sharp edge, but it won't sharpen a blunt knife very well. A good way of going about things is to use one of these 1000/6000 combination stones with this method

I used to use a waterstone but got a present a year ago of Furi 'Diamond Fingers', which I find even better and a lot quicker to use.
The three-piece professional set isn't cheap (I think they're about £100 or so) but it's fantastic and means it is possible to keep all your knives sharp without too much effort.
