I walked into the kitchen yesterday to find my beloved using my Global vegetable knife to cut the stems off a bunch of flowers. Nice thick, very woody stems.

When I calmy asked why she decided to use that knife rather than the other old knives, I was told that it was the sharpest when she cooks. I did explain there was a reason it was so sharp as I spend half a day sharpening them all properly once in a while.

Her answer was that if it went blunt again that I could sharpen it. Yes dear, I could crash the car in to a wall once a month and then have it repaired but that would be silly...

Doh!

At least she wasn't using the tip to open a tin of syrup or tighten a screw in a mains plug! I've seen that done and winced.

My Misses keeps putting my Mac and Tojiro knives in the dish washer and on the odd times when she does wash them in the sink she uses a scouring pad.......................

I told her that when we have the money for a large house she will get her own kitchen and i will have mine!

I've got a steel but I'm not very good at using it,

quite tempted to get a auto sharpener, as my sharpening does work but its not amazing.

My wife is extremely well trained and knows to treat our knives with due care. I would probably file for divorce in the OPs position.

Sympathise with you all - have a full set of global knives but want to know the best way to sharpen them. SWMBO bought me a whetstone but is this better than a ceramic steel?

Best way is to use a Japanese water stone (the global branded one for example - although there are much better ones out there). The ceramic steel is fine for maintaining a sharp edge, but it won't sharpen a blunt knife very well.

A good way of going about things is to use one of these 1000/6000 combination stones with this method

I used to use a waterstone but got a present a year ago of Furi 'Diamond Fingers', which I find even better and a lot quicker to use.

The three-piece professional set isn't cheap (I think they're about £100 or so) but it's fantastic and means it is possible to keep all your knives sharp without too much effort.

I use a waterstone and started with the correct 'guides'that help you out. They are like razors when I'm done with them.

I have a ceramic steel as well which I use before I start to cook.
