Beans On Toast á la Jameson

Prep time: 5 mins
Cook time: 10 mins
Difficulty: V. Low
Serves: 2 hungry people


Ingredients

1 tin flageolet beans, drained and rinsed
1 tin tomatoes (posher is better - I like Sainsbury's poshest tinned cherry tomatoes)
1 red onion, finely chopped
2 cloves garlic, finely chopped
Salt/pepper
Basil (fresh or dried, fresh is better)
Whatever bread you like for toasting

Method
Soften the onion and garlic, being careful to avoid burning the garlic. Add tomatoes and season well. Add basil and simmer for 3-4 minutes. Add beans. Simmer for further 3-4 minutes until beans are piping hot. Stir in a glug of extra virgin olive oil.

Serve on buttered toast. Grated parmesan is nice on top.

I use that as a side dish for an Italian roast pork dish I make from time to time. Very nice combination.

edit - try using canelli beans too.
