Obviously you could make vegetable pasties...or even a pie.

A nice hearty minestrone style soup, and a quiche with salad?

Can I say that you could always just cop out and order a take-away?

Or suprise the lady by taking her for a suprise romantic dinner at her favourite eatery?

Yes, I'm lazy. I have no shame.

No pasta? If you have you could do a spicy tomato sauce - doesn't use your veg though so I'd probably go with the veggie pasties or soup.....

edited to add, we do this in January - I don't shop and we work our way through the cupboards and the freezer, defrost the freezer at the end of the month and then go shopping....

It saves some pennies after the Christmas splurge and there is always loads of stuff to eat if you're a bit creative!

Veg Pasty (do you have cheese to make a sauce?).
Roast potatoes.
Spicy Tomato & pepper sauce (onions & garlic to go with the peppers?).
