There's a write up in this month's Constructors Car Club (one of several active car clubs around Wellington) magazine about a local hill climb - quite a mixed bag of entries including a Lotus 211, 1953 Anglia with a 5.7l V8, Mini with a 1.6l Honda VTEC engine.

Manfeild is the nearest circuit to Wellington about 2 hours drive away. Track days are organised by various clubs and are ridiculously cheap by UK standards.
Wellington has an annual sprint around a section of waterfront road - the Shelly Bay Sealed Sprint. [url]here's some pics

I think most of the hillclimbs I've been to (club-level stuff) have had road-legal machinery (like rally cars, Se7ens etc) running as they're generally on closed public roads rather than private courses like the UK hillclimbs seem to be.
Someone else may be able to give a more definite answer though, I've never competed so don't know the ins and outs of regulations etc.

Re importing, if it's not a road-legal car then you can import anything. You'll have to get it through MSNZ (Motorsport NZ) approval before using it in MSNZ events, but this is just like getting it through scrutineering.Whats the story for importing UK registered cars to NZ? If it's to be used on the road, it very much depends what it is. If it's pre 1988 (I think) you'll be fine as it comes in as a classic. If it's not you may run into our frontal impact regs which could be troublesome.
Where you'll be fine though is that if it's a car built by a manufacturer that makes less than 200 cars a year (this includes home-build cars) in its year of construction, then you can bring it in under LVVTA (Low Volume Vehicle) regulations.
The car will need to be inspected by an LVVTA agent and "certed" for road use. So long as it meets their requirements then you'll be passed for road use too, although you ma have to do silly things like mount a high-mount stop-light etc, generally if the car's of good construction you should be able to get it through no problems
