Does it have a full-width dash with a glovebox? If so, hide it in the glovebox. The standard place is above the passenger footwell which is not very accessible for the driver at the best of times.
If you could get a stereo with remote control, you could stick the main unit in one of the rear door bins.
Edited to add: I have a load of wiring stuff for a stereo if you (or anyone else) wants it.

Not an easy one this if you don't have a dash with glovebox. What you could get is one of the units which have a wheel or steering column mounted controller (Sony do them as do a few others I think) and hide the head unit under the seat, dash or in a box in one of the rear bins.
Best bet though is probably one of the units which you can completely pull out. At night you can take it indoors and during the day if you go shopping or something you can lock it in the boot.
Best of luck!

Removable one is the best option. Had a good removable one in my Orion years ago. Pulled out in seconds with a little carrying handle. Got it Haflords. Made it so much less trouble for the scrote to pinch too, when I left it in one evening whilst enjoying a meal out. Lesson learned - always remove the removable radio yourself.
