I don't know, and neither do the staff at the local market where I bought some 'Ham'.

Okay, on the basis that "we" are happy with the difference between pork and bacon, bacon is the collective term for all cuts of cured pork.

Gammon comes from the hind leg of a "bacon pig" and is cured whilst still attached to the body. Ham is also taken from the hind leg but differs fromm Gammon in the way it is cut from the body and cured.

AAaaaahhhhh. I see.

I thought it may be something with the curing process. ( and the use of salt/brine/air drying etc ??)

Whats the cutting difference about then ?? Thought they just butchered the carcass the same way, and it was the treatment of the meat after that.
