Has anyone got a good idea for a marinade of some sort to put on top of chicken breasts before roasting them? Intended to go with a mix of sweet potatoes, red pepper, red onion and garlic (also roasted) and salad.

Cheers in advance.

Tomato ketchup and Coca Cola.

Sounds horrendous doesnt it?

Trust me though, I'm not a Doctor.

I criss cross the cut with a knife. Marinade in a bag for a few hours of whatever you choose. Sweet chili mix is nice.

That's made me think of "Trust me, i'm a stomach." hehe

Thanks for the replies all, I shall save them for another time as I had already begun when the first reply rolled in. Went for olive oil, wholegrain mustard and honey. Was pretty good too!

Yep, reggae reggae sauce is a little harsh as a pouring sauce but when used as a marinade is lovely.
