Hi - Mum is diabetic and makes her own ice-cream using Canderel ( sugar like replacement) - unfortunately because it isn't real sugar, the icecream sets rock hard.
Is there an additive that she could put in with the mix to make it softer?

Yoghurt. Dead simple really for decent ice cream

Blend fruit of your choice - like a smoothie. Stick in an icecream maker with added frozen fruit. Eat. No added sugar of any kind. The yoghurt will keep it soft enough.

Thanks smile Have passed on the info, and Mum is going to experiment. She'll try the yoghurt suggestion first...minus the fruit as she prefers plain vanilla.
Re food grade glycerin, she thinks she might be able to get it from Boots - I've done some google searches but it throws up a lot of beauty products. I have seen a recipe for ice cream with it included so it's viable - just need to find out who stocks it in small portions.

That's the pharma type, which includes the warning 'use with caution if diabetic' and with worrying side effect warnings.

It's looking like glycerin isn't suitable for diabetics.

You should only be using up to a maximum of 1% of the mix so it shouldn't be a problem.

You should be able to get glycerine in cake decorating shops. I'd be surprised if you can't get it in Waitrose (or even Tescos). It'll be with the little bottles of supercook vanilla etc I reckon.
