I think the grooves are there to clean the pad surface and to allow quicker contanct of the pad to the disc - if you stamp on the pedal with flat discs the pad 'floats' for a little while on the trapped gas which means it takes longer to stop, the grooves allow the gas to compress into them and so start working sooner.
The cross-drilled vented discs do a similar job, but also increase cooling efficency.
This is just what I've been told, I've never tried them out that much or thought very long about them.
I do know both types make a lot more noise than flat discs and aren't as efficent at stopping you if you are composed and know what you are doing at all times.
For mortal such as myself, who get spooked when a deer or other wildlife jumps out at the car, I think they are a god send as they start to brake sooner.
