Water going missing

Noticed that the header tank was empty every time i looked so thought i best check it out, found the water pump was dripping so got a new one and fitted it, problem solved or so i thought till today when i looked and it was right down at the bottom of the tank again, where is it going.
The water is clean and o it the oil so dont think there is a head gasget problem. the pump is fine now and cant see any drips anywhere plus i never find pools under the car but it goes somewhere?

After I changed the radiator, it emptied the expansion tank twice before all the air got out of the system, I like you was convinced it was leaking somehwere until the level remained constant. Give it a couple of fills before worrying too much?

Possible air lock remove cap from header tank refill leave cap off run engine for 2..3 min
replace cap let engine get to running temp 80 80 deg
