It's a mini!
My ex's used to do and it was a porous block. After we replaced the HG twice. I'd look simple, rad clear? fuelling fine? before jumping to a sinister conclusion. Does it gradually lose water anyway? Hoses pressurising? Rad cap is a good one perhaps the spring stuck or something. Mine uses evian as well but prefers volvic in emergencies.
Do flush with distilled water though.

Mine did that on Fri...also blew a hole in the radiator!
Just fitted a new head gasket and rad and it seems to be OK (fingers crossed!!)
I think it's been pressurising the rad for a while.. may be worth checking as I certainly didn't have any other symptoms.
