Evening all,

I've got the ex girlfriend coming to stay at the weekend and she'd like a curry. The problem is she remembers that my cooking wasn't bad so rather than buying one i'd like to make one.

Better not make it too hot though!

So what recipes do you suggest?

Thanks,

Phill

Mockney Winker's Thai Green Chicken Curry recipe is
very good, very easy. You can make any curry as
hot or mild as required, just lay off the chilli
powder or fresh chilli.

From bachelor days when we made a curry while .... errr... tired and emotional. Whatever you do DO NOT put a tin of mushy peas into it. Seemed like a good idea at the time, bog unblocking duties were not pleasant.

Never, ever, attempt to use a toilet bowl as a container
for marinading the meat ingredient of a curry. You must
have been dog tired and emotional to the point of hysteria.

Try a Rendang - simple & tasty.

2 onions, 4 cloves garlic, 2" peeled ginger, 1 tsp turmeric, as many deseeded red chillies as you want (start with 2) - put it all in a blender until smooth.

Make a couple of pints of coconut milk by melting a block of creamed coconut in hot water.

Put the coconut milk & paste in a large pan, bring to boil.

Add about 600g of cubed braising or stewing steak so it's covered by the liquid.

Add a piece of lemon grass and 2 kaffir lime leaves (or one bay leaf)

Simmer uncovered for 2 hrs, stirring once in a while, add salt to taste.

It will reduce down and become sticky, stir more often now & serve when the beef is falling apart and there's just enough liquid left to make a thick gravy.

Serve with lime pickle, plain basmati & popadums

it has been said that your toilet has less bacteria on it than a chopping board... just a thought!

If you search the forums there have been several posted in the past. Together with some mouth watering pickles.

PS, Pasanda. With beef. Very thin and beaten.

If you want to impress her make pilau rice to go with it. Dead easy but looks and tastes great.

In a large saucepan with a tight fitting lid take 1 onion and fry it in butter until soft but not brown. Take 6 cardomon pods (slit open at the ends), 6 -8 cloves, 8 peppercorns, 2 cloves fine;y chopped garlic and 1 cinnamon stick (broken up). Add to onions and stir fry until onions brown ( about 5 mins). Add your rice and about 2 tsp turmeric (for 10 oz rice) and fry for about 5 minutes, stirring constantly. Then add water (20 fl oz for 10 oz rice) plus salt to taste. Then bring to the boil and cook as you would normally cook rice. While the rice is cooking gently brown some flaked almonds and fry some sultanas lightly in butter for about 1 minute. Fork into the rice when cooked. (Having removed the cardomon pods which will now be sitting on top of the rice).

These guys are good - easy to follow instructions (pop chicken in, wait until white, pop in this, pop in that).
