...but enough about me hehe

I'm looking for some inspiration for somewhere hot (nice hotel/relaxing by the pool) and with some interesting things to do see and a decent bit of nightlife (but we're not 18 anymore!).

Without sounding like Alan Wicker too much, I've done: USA West/East Coast/Florida/Vegas/NY, Thailand, Malaysia, Vietnam, Cambodia, Bali, Costa Rica, Cuba, Dom Rep, Cyprus and Mexico.

My SiL seems to always want to go miles away and is suggestion Bali again but there's not much there and we've been there once as it is. India is out as the rest of us (4 people) are Indian and won't go near the place.

Any ideas/suggestions would be much appreciated.

Sod that. It's a very long way to go for Bogan Benidorm. (Yes, I know it has nice bits too.)

Maldives?
Sri Lanka?
Mauritius?
Other Caribbean places?

What time of year?

Somewhere like Mauritius could fit the bill, alternatively somewhere like Mombasa/Zanzibar which could be combined with a safari if that floats your boat

I was in Buenos Aires in January. It was hot, and interesting.

Zanzibar.

Few people talk about this place, partly because it's a plane change to get to from the UK but is a stunning island. Stone Town is a hoot. Loads of stunning beaches and plenty of options on accommodation from fancy five stars to beach hut type resorts. Food inspired from everywhere that food is great; Asia/Italy mainly.

It's always tough to find that perfect balance between relaxing and having things to explore. Maybe look into the Greek islands or Portugal?

It doesn't tick the 'miles away' box, but Ibiza should suit your needs, especially if you stay in one of the smaller towns/villages.

Namibia - One of the most beautiful and serene places I've been. If you want to get away from the crowds, it's the most sparsely populated country in Africa.

OP mentioned nightlife as a requirement otherwise I’d have recommended Madagascar

My SiL seems to think flying a million miles is a requirement!

Zanzibar is very nice but I wouldn't say the nightlife was amazing, plus you had to be a bit careful in Stone Town after dark (hotel insisted on escorting us to restaurants and having someone meet us when it was time to head back). Some lovely hotel establishments on the northern part of the island.

South America has lots to offer depending on the time of year.

I myself have been enjoying Croatia, again lots to offer - history to nightlife - and is hot in August.

Agreed. Malta. Hot and interesting. Great history, especially WW2.

Edited to add, and everything is close. Gozo is also hot and interesting with a lovely short ferry ride across.
