My g31 530d has just had its rear pads replaced in addition to discs

The fronts are all good for a while longer

Im at a bit of a loss as to why the brake system should wear like this

Surely most effort is put in by the front brakes so why has my car chewd through the rears so fast?

The only thing I can think of is either stability control/DSC or something to do with cruise control moderating my speed on descents - which isnt something I generally use much anyway and whilst I like a bit of fun on quiet roads dont think DSC makes much of an input on my driving style

Depends on how you drive. A bit of fun driving style might mean a few understeer and traction control interventions… which actively work the rear brakes.

I believe it also uses the rear brakes for the cruise control, our mini did a set of rear pads in 11k, however for reasons only know to mini they set the wear indicator to around 60% of the pad being worn.

My guess would be the "Auto Hold" feature, modern day hand brake coming on/off each time you stop, a slight bind each time you drive off.

Intriguing, my g31, a measly 2.0 uses brakes as expected, fronts much quicker than rears

This is quite normal for them and because of dsc and cruise control. My G31 here in Germany had rear pads only replaced at 45k (km) and the fronts were only half worn. Rear brakes are used a lot at higher speeds here for DSC even when not directly braking yourself.

The issue is on mine the dealer repalced only the pads at 45k and not the discs. This shouldn't be done as it results in DTV and pedal vibrations shortly after because the pad is bedding in to a half worn disc. I've put up with this for 20k and had various arguments with BMW about it, but i'm just replacing both the discs and pads this weekend myself.
