Disconnect aux battery.
Unbolt fridge unit.
Trace wiring back to start point and remove.
Photo and place on local Faceache and/or fleabay.

True - but it is still full of refrigerant!Unbolt fridge unit.

I'd at least like that removed properly before I start hacking, is it something any garage could do like an aircon service?
The refridgerant is contained in the unit, it's like a fridge bolted to the roof, unbolt it, disconnect wiring and it will all come out as one. No need to touch any internal pipes.
Has it got a red diesel tank or is it running off 12v only?
Yes dependant on condition and type it could be worth £700 2nd hand.

Perfect! That puts my mind at ease.Has it got a red diesel tank or is it running off 12v only?

AIUI, 12v only. From what I can tell, it'll run off engine when running, then there's a dash switch for aux battery if the engine is off.
Main fridge bit doesn't worry me too much. Just big and awkward 3m up - it's the wiring running through to cab then dash that I have an irrational dislike of.
Time to put big boy brave pants on. Tbh, I'd be more than happy with a couple of hundred quid and no fuss!

I'd ask the fridge bloke if he'll buy it off you, shifting it may be a pain otherwise. Unless you really need the extra payload I'd consider just leaving it, plus there's always the bonus of having the biggest beer fridge in town if you're having a barbeque and inviting friends!
It's definitely not staying! The unit inside is a similar size so it's not just payload - and it's not going to be used for any more deliveries...
Got a feeling removing 100+kg from way up high will rather improve the handling too.

I doubt it's 100kg, that's more like an HGV unit; I'd expect more like 25-30kg although my interest is now piqued. Can we expect a custard shot with someone holding the condenser and evaporator while standing on some scales?
I'm told the external bit is 80kg alone!
But OK, custard test accepted.

I am in Kent and do low voltage wiring, I can do the disconnect if you want?
Sir, that'd be immensely appreciated - if it's something you do for a living then there's a few bits I'd like to have a chat with you about!Let me hear from fridge guy first for draining, then I'll drop you a PM.

If you struggle in Sussex getting it degassed (try commercial companies & HGV services) then these guys are excellent. https://www.ac4cars.co.uk/
