You've identified the two good reasons to go.
The city was comprehensively re-designed by the RAF eighty or so years ago. It was re-modelled taking inspiration from a 1960s shopping centre in Sheffield.
But is has a certain charm, and a lot of smokers. I have never been anywhere with so much cigarette smoke.
So, if German cars and passively-acquired lung conditions are your thing, Stuttgart welcomes you.
Yes, was there in the summer as a friend lives there. I stayed in Böblingen.

City itself good to wander around, food and local beer suits my tastes (maultaschen, käse-spätzle).
If you find yourself near the small village of Waldenbuch, the Ritter Sport chocolate factory there has a cafe and a shop with all sorts of weird varieties to bring back for people.

Schlossplatz is lovely, with events often taking place. Also, Konigstrasse, Germany's longest pedestrian shopping centre.
If you stay at the Raddison by Pragsattel station, it's in the Porsche Design Centre with the Porsche Zentrum dealership next door. Do that as well as the museum. It's a nice half hour downhill walk into the centre, and get the U-Bahn back to Pragsattel.

We've been a couple of times and each museum deserves a day of your time especially if you want to do the Porsche factory tour as well. If you do I highly recommend booking that as soon as possible as it sells out very quickly and they will have just released dates for this year.
Another recommendation would be to book a table at Christophorus which is the restaurant on the top floor of the Porsche Museum, the food is excellent as is the service and venue but it doesn't come cheap.
If you're driving (especially if you're driving a Porsche) you can park in the underground car park behind the museum which is convenient but make sure you pay when you get your entrance tickets or you might have to queue up again before you leave (lesson leaned from the first visit) and if you ask nicely they will let you park your Porsche outside the front of the Museum to take some pictures of your car.

The Mercedes museum is one of the best car museums in the world. The number of vehicles on display is astonishing and covers virtually every aspect of their history in quite some detail. Their sporting achievements and the display covering that on the ground floor is very impressive. We spent a whole day there and still didn't really take it all in.
Again if you have a car and the weather is nice you can take a drive up to the Schloss Solitude which sits on top of a hill overlooking Zuffenhausen. It's a nice afternoon break and there is a cafe on site.

I had a long weekend there a few years ago. As you say, Porsche and Mercedes museums, I caught a bus/tram up to the huge broadcast tower on the hill overlooking the city, the top of the tower is a bar which sells excellent dark beer. 
We were there in summer 2024 - there's a good view from the top of that tower, interesting route up on the train (rack railway) & walked the final bit through the wood. https://en.wikipedia.org/wiki/Stuttgart_Rack_Railw...
Easy city to get around w/ the Metro/Stadtbahn & plenty to see - particularly if your interested in architecture/history - although the library that we wanted to see was closed for refurb.
Porsche museum was very good, really busy on a Sunday though - there was free additional parking behind the railway station (sign posted) in one of the Porsche employee car parks.
Didn't have time for the Merc museum, will tick that off one day.
Had a meal at Goldener Adler, regional/German, which was good; bit out of the centre though.

BTW Porsche Museum offers a discount on admission if you've a train ticket / arrived by train (the station backs onto the museum). Looks like the factory tour is already booked out. Can't believe it!

Echo other comments - merc museum was better than porsche in my opinion - looking forward to taking the kids one day (serious amount of information with the headphones, alot to take in), we also drove to munich to do the bmw museum same trip.
Merc still my favourite one - booked AMG factory tour this year, after last year we flew and did Lambo, Alfa, Pagani and ferrari museums - I would say the ferrari museum ranks alongside Merc.

Completely agree with the others that the Mercedes museum is better than the Porsche one.
Also if you have time, and a passing interest in architecture, the Weissenhof Siedlung is good. It's essentially just a housing estate, so might not be your thing, but I really liked it. YMMV of course.

I visited Stuttgart in September 2020, between lock downs! A friend of a friend is a senior finance bod at Porsche.
Porsche Museum is good, but MB has a LOT more history and exhibits.
Did both in a day.
When I went there a few years ago, I tied in the two museums with the classic car show at the main exhibition centre. This year, it's on from February 19 to 22.
The advantage is that the exhib centre is right by the airport. I flew in, took a train to the centre then visited the show on the day I flew home.
Granted, the city centre isn't that exciting but there was a decent range of places to eat (at least, there used to be).
