I had my 1st Salmon sandwich in nearly 20 years last week (I'm 47 and a half), and it was lovely (bit of pepper and vinegar mixed in). Cucumber seems the 'go to' accompaniment, however I cant stand cucumber.

So what other accompaniments could I use to jazz it up a bit? Bit of rocket maybe? Onion?

Crushed chunky avocado with yuzu, grated hard boiled eggs, furikake and a light drizzle of chili sauce.

Cream cheese with dill and lemon, plus sliced pickles, or beetroot, for a bit of crunch.

Horseradish is good with fish, but upgrade it with a bit of Wasabi.

Beetroot and horseradish relish.

Really difficult to find, but well worth seeking out.

In kosher delis as 'Chrain'.

Horseradish and thinly sliced beetroot, lots of pepper and lemon juice. Heaven.
