I have had my new Defender for a year now and love it. I "upgraded" from an old shape 110 Utility Defender.

The only annoying feature is it defaults to having all the safety bings / bongs on every time i start it.
Is there any way to change the default to my custom one?

Also, is there any way to turn off the seatbeat warning too?
I have tried a few combinations of putting the seatbelt in and out, but that hasnt worked for me.

If you're referring to the ADAS, then probably not. It's legislated to be there, so if you want to change things, you're going to have to take it up with your MP and IIRC it's an offence to tamper with it.

It's just two presses of a steering wheel button to deactivate...

It does indeed only take two presses. But I sometimes forget to do it and off we go again with the bing bongs.
But more importantly, I live on country roads and its concerning when the lane assist snatches at the steering wheel.

Yes, I am sure they probably are, its just not a well thought through idea imo. I don't want a car that fights me to go round a pothole. Its flippin dangerous!

Andy, the bongs, (speed limits warning, ADAS etc) were added to new Defender just over 2 years ago. My new 110 was one of the last to be built without it! Might be a good reason to keep it a bit longer....

As other have said, you can configure the favourite button on the steering wheel to allow you to turn it all of in 2 presses.

Something very wrong with the world if you need to drive round potholes in a Defender!

Yes, I think that adds to the re-sale value of your one smile

It's not a major inconvenience, don't get me wrong. I do push the button and life is good. But if you do forget it can be rather dangerous in some situations. I certainly can't be arsed to speak to my MP (Mr Farage) about it.
